Braised Abalone in Crab Roe and Egg White Sauce

Abalone 400 g [1 pc, canned]
Broccoli 20 g
Crab(s) 1 pc [with roe]
Egg White 1 pc


Premium Oyster Sauce 2 tbsp
Premium Dark Soy Sauce 1/2 tsp
Water 300 ml
Stock 150 ml
Corn starch 1/2 tsp
Water 1 tbsp
Corn starch 1/2 tsp

  1. Put abalone in seasoning mix, simmer until liquid reduced to one third. Stir in thickening. Take out abalone and keep warm.
  2. Clean the crab and take out the roe. Cook the crab in boiling water and take out the flesh.
  3. Blanch the crab roe and drain.
  4. Parboil broccoli florets in salted water and oil. Drain and garnish along with abalone.
  5. Heat 1 tbsp oil with the sauce mix. Stir in egg white and crab flesh. Lastly add the crab roe and cook for a while, pour around the abalone. Serve hot.
